I have been visiting the Springs about every three months on business for the last 3 years. Phantom Canyon used to be one of my favorite places, but that is changing. The food here has always been very good, albeit a bit pricey. However, I don't go to brewpubs for food. When I first started drinking here, the beer was very good, but it has steadily gone down hill. The selection seldom changes by more than one beer, and the house beers generally lack character and are often flawed. The biggest flaw seems to be Diacetyl, which for non-brewers, is a natural byproduct of fermentation. It imparts a buttery flavor like you get in movie theater popcorn. It's OK in small quantities in a Bohemian Pils, but bad just about everywhere else. I've had at least 4 different beers at Phantom Canyon over the last year that were undrinkable because diacetyl. That is unexcusable. You guys need to find a new brewer. |
